Chakalaka:
spicy mixture of African-style vegetables and spices.

Originally a condiment sauce that probably originated from the townships of Johannesburg. Its vegetable ingredients, such as tomatoes, carrots, paprika and chilli peppers, are flavoured, depending on the recipe, with garlic, pepper, curry, ginger and coriander. In Africa it is traditionally served with bread, polenta, casseroles or curries. Today it is also very popular in western cultures.  

Tomato-Chutney:
Indian-style sweet and spicy tomatoes

Chutney (from the Hindi: chatni) is a sweet and spicy to hot sauce in Indian cuisine, often flavoured with pieces of fruit or vegetable like mango, tomato, onions and with the addition of garlic, chilli, pepper, ginger, turmeric etc. and then finished with lemon juice or vinegar. The English brought it to Europe in colonial times.

Jamaica Reggae:
Caribbean-style hot and spicy sauce

In Jamaica dried strips of meat and fish are marinated with a very hot spice mixture called ‘Jamaican jerk spice’ before grilling. The main ingredients of the spice, besides spring onion, cinnamon and garlic, are cloves and one of the hottest chilli peppers in the world.
